CINNAMON
Cinnamon is a warm, sweet-spicy perfume note that can also reveal dry woody or powdery facets. Its familiar link with baking makes it useful in food-inspired fragrances, but cinnamon does not have to turn a perfume into a dessert. Against flowers, citrus or woods, it can provide a more pointed spicy contrast, with the overall sweetness shaped by the rest of the composition.
The broad name covers different botanical materials and interpretations. Ceylon cinnamon bark oil comes from Cinnamomum verum, also called Cinnamomum zeylanicum; related cassia materials offer other versions of the spice. Leaf oil from C. verum has a more clove-like character than its bark oil, so the plant part matters. Perfumers also have cinnamon absolutes available. A listed cinnamon note identifies the scent theme rather than confirming one species, origin or extraction method.
