CHERRY PROSECCO

Cherry Prosecco is a sparkling fruity-gourmand accord in perfumery inspired by the effervescent combination of ripe cherries and chilled Prosecco, the Italian sparkling wine traditionally produced primarily from Glera grapes. History & Production: Cherry Prosecco is an olfactory accord rather than a natural extract, since there is no single aromatic raw material obtained from a cherry-and-Prosecco combination. Perfumers can construct the effect using cherry and red-fruit aroma materials, fruity esters, grape or wine accords, citrus facets, aldehydes and other effervescent materials, subtle alcoholic nuances, crystalline sweet notes, and transparent musks. Particular care is required to keep the cherry luminous rather than medicinal or overly almond-like, while the sparkling-wine component should suggest bubbles, acidity, and dry vinous freshness rather than dense grape sweetness. The resulting accord can range from dry and aperitif-like to sweeter and more gourmand depending on its supporting materials.
